Cured iberico pork shoulder of recognized quality from 50% iberian pig that is raised outdoors in the field in at least one hundred square meters for each animal and is fed with natural cereal and legume feed and, on many occasions, acorns. These pigs must be at least 12 months old when they reach their slaughter weight which is at least 115 kg. Maturation period of at least 16 months.
