Shoulder from 100% Iberian breed pig raised in total freedom in the Extremadura pastures. These pigs replace 6 @ (1 @ = 11.5 kilos) by feeding on acorns and grasses from the pastures during the last months of life. Each animal in this category has a minimum of 2 hectares of pasture (almost three football fields) for fattening during the montanera (period of use of the acorn between November and March).

Maturation period of each piece of at least 2 years.

Weight of the piece between 5 and 6 kilos.
