Supreme quality sausage made with "prey" from free-range Iberian pigs that have replaced their last 70 kilos by feeding on acorns and herbs from the pastures of Extremadura. The prey is the most valued piece of the Iberian pig. It is marinated for 48 hours with sweet paprika from La Vera and salt and cured for at least 6 months in a natural drying room.
