Free range iberico acorn-fed "abanico" comprises the muscle that surrounds the ribs on the outside. It is a very marbled piece which makes it a very juicy and tasty piece perfect for cooking on the grill or grill simply with salt. Each piece weighs about 200 grams, its meat is dark red and its cut can modify the shape of the fat from the ribs that we should not clean before cooking since it is what gives it its flavor. Its culinary preparation is very similar to that of the Iberian "secreto"; the whole piece is cooked and, being a quite fibrous cut, it must be sealed on the outside and cooked completely inside. After the meat it should rest covered for about two minutes before cutting into thin strips. The salt, always thick, can be added before roasting or once served on the plate.
